Tequila is a versatile drink that can be enjoyed several ways. Only produced in certain regions in Mexico, the blue agave plants harvested in each area can have a distinct taste. While all tequila comes from the blue agave plant, not all tequila tastes the same.
Every plant grows for 6-10 years before being delicately harvested, ensuring the heart of the plant is extracted from the ground. The heart or “pina” of the agave plant is then cooked in traditional brick ovens or stainless steel pressure cookers, converting carbohydrates into fermented sugars. Once this process is complete, the agave hearts are transported to a milling area for sugar extraction. Next, the sugars are fermented in large wooden or stainless-steel tanks for 7-12 days. Depending on the type of tequila (blanco, joven, reposado, añejo or extra añejo) the mixture will be distilled 2-3 times, then aged in oak barrels for several months or even years.

Next up, try the tacos de arrachera with salsa roja paired with a delicious Reposado Tequila. Finally, complete your meal with an Añejo Tequila paired with churros with a dark chocolate sauce. Directions: If desired, moisten the rim of cocktail glass with a lime wedge, hold the glass upside down and dip the rim into salt. Combine Tequila, Cointreau and lime juice in a cocktail shaker filled with ice. Shake, strain into glass, garnish with a lime slice and enjoy. It’s as simple as that!
