Your Resort-Inspired Cinco de Mayo Menu

Appetizer: Guacamole from Secrets Resorts & Spas

No Cinco de Mayo is complete without a bit of guac’ on the table! This savory recipe calls for fresh ingredients to make a mouth-watering appetizer or snack for the special day.

INGREDIENTS:

  • Onion – White or Red
  • Coriander
  • Lime
  • Avocado – should have a little give, not too soft and not too hard
  • Whole ripe tomato
  • Jalapeño Servings (2-4 people use 2 avocados, ½ tomato, ½ cup onion, lime to taste)

PREPARATION:

  1. Cut the avocados in half
  2. Use your knife to remove the round seed easily
  3. Use a spoon to remove inside contents into a bowl
  4. Mash the avocados in a bowl
  5. Slice the onion into small square pieces
  6. Add onions to the bowl
  7. Slice coriander; add to the bowl
  8. Cut lime in half
  9. Squeeze the lime in a bowl (depending on your taste)
  10. Dice up the jalapeño
  11. Dice half tomato
  12. Salt & pepper to taste
  13. Mix all the ingredients
  14. Enjoy

Main Entrée: Grouper Aguachile Ceviche from Dreams Resorts & Spas

Ceviche may be a Peruvian dish, but that hasn’t stopped it from becoming widely popular in Mexico. With fresh fish and citrus notes, this is the ideal light, refreshing meal for Cinco celebrations.

INGREDIENTS:

  • 1 lb. of Grouper fish, diced
  • 1/3 c. of lemon juice
  • 2 c. of fish fumet
  • 3 1/3 oz. chopped celery
  • 3 1/3 oz. white onion, chopped
  • 4 tsp. garlic clove, roasted
  • 3 1/3 oz. ginger
  • 3 1/3 oz. olive oil
  • 3 1/3 oz. salt & pepper
  • 1 1/3 oz. diced cucumber
  • 1 oz. pickled onion
  • 2 tsp. cilantro (2 sprigs)

DIRECTIONS:

Place the fish into a bowl and blend the lemon juice, fish fumet, celery, white onion, garlic, ginger, olive oil, salt, and pepper until you get a smooth sauce. Marinate the fish with the sauce for at least two hours in the refrigerator. Once ready, place the ceviche in the center of a deep plate and garnish it with diced cumber, pickled onions, and cilantro leaves. Enjoy!

Dessert: Coconut Sorbet from Now Resorts & Spas

Did you know Mexico is one of the largest producers of coconuts in the world? What better way to celebrate Cinco de Mayo than with a sweet coconut flavor dessert?

INGREDIENTS:

  • 2 14.5-ounce cans coconut milk
  • 1/2 cup honey
  • 1 teaspoon vanilla bean vanilla extract
  • Dash of salt
  • 1/2 cup sweetened shredded coconut flakes, lightly packed

DIRECTIONS:

In a large heavy-bottom pot, whisk together coconut milk, honey, and salt over medium-low heat until honey melts and incorporates into the milk. Remove from heat and add vanilla extract. Chill the coconut mixture in a large mixing bowl for approximately one hour– until well chilled.

Chop the coconut flakes into small pieces and whisk them into the chilled coconut milk.
Freeze mixture in ice cream maker, following the manufacturer’s instructions. Transfer ice cream to a plastic airtight container and freeze for 2-3 hours before serving.

Cocktail: Besame (Kiss Me) from Zoetry Resorts & Spas

Cinco de Mayo is so often synonymous with margaritas, but how about a more romantic tequila-based drink for a date night celebration? One sip and your special someone will be kissing you for such a fantastic drink!

INGREDIENTS:

  • 2 lime wedges
  • 5-6 raspberries
  • 1 1/2 oz. Agavero Tequila
  • Passion fruit juice
  • Dash of Chambord

PREPARATION:

  1. Muddle limes and raspberries in a highball glass.
  2. Add tequila.
  3. Top off with passion fruit juice.
  4. Add a splash of Chambord.
  5. Pour this mix into a cocktail shaker with ice.
  6. Shake well.
  7. Strain back into the highball glass.
